This is an amazingly tasty and easy-to-make recipe of Chicken strips, the kinds we get in KFC but minus all the fat because this one is baked.
Take 500 gms. Boneless, skinless chicken breast.
1 cup buttermilk, can be substituted with diluted curd.
Salt and pepper to marinate.
Salted biscuits – 2 packets.
Eggs for coating.
Wash the chicken and pat dry. Cut it in narrow strips. Marinate the strips in buttermilk, this will keep the chicken tender and add salt and pepper too. Let it marinate overnight to get good flavor.
Before putting it in a pre heated oven at 220 deg C. Crumble the salted biscuits or one could use breadcrumbs which have been seasoned with any seasoning enjoyed by you. Now take out the strips one by one, lightly tap off extra buttermilk. Dip in the egg mixture. Generously coat with the coating and keep aside in a baking tray. Do this to all the strips. Keep the strips similar sized to cook evenly. Now put them in a 220 deg C oven for around 20 – 25 minutes or till the coating is golden brown and the chicken is well- cooked. Do turn once so the coating on both sides is well cooked. Serve hot with any chutney, onion rings and lemon rings.
