Aamras or mango puree is a simple yet delightful dessert. Having lived in both Maharashtra and Gujarat, I have seen the festivity that surrounds the herald of mangoes in summer so that chilled aamras can be partaken.

It is always in the fridge in a Maharashtrian or Gujarati home so that chilled aamras can be had along with a meal or with puris. It is a super simple recipe that can be made very easily. The trick is in getting deliciously sweet, ripe mangoes.

My younger son fell in love with Gujarati aamras when we went to a thali place on Ashram Road in Ahmedabad. He kept on drinking his aamras and the server kept refilling his bowl. He must have easily had 6 bowls that night. Since then, he regularly asks me to make aamras at home. Of course, kesar is the preferred mango in Gujarat and Alphonso in Maharashtra.

Here I make aamras with the locally available Banganpally or Raspuri variant. You can make it with any ripe mango available.

Here is the easy aamras recipe:

Ingredients

2-3 mangoes ripe

½ tsp. cardamom powder

2-3 tsp. sugar (optional)

½ cup chilled milk or water to dilute

For garnish

Few saffron strands and slivered pistachios

Recipe:

Chop mangoes into pieces and blend in a blender along with sugar. Taste mangoes before blending so that you can adjust the quantity of sugar depending upon how sweet the mangoes are.

Add milk or water and blend again to dilute to a consistency of your preference. I normally like it thick so do not add water.

Garnish with a few strands of saffron and sliced pistachios and have it chilled.

Your aamras is ready. Keep it in the fridge to chill and consume as a snack, dessert or with your meal.

Pro Tips

Always choose ripe mango. In case your mango variety is fibrous, just strain your aamras.

Vary the quantity of sugar as per your taste. Normally, I don’t need to add sugar. But if you like your aamras sweeter add sugar as per taste.

You can also serve with some ghee on top as is done by a few people.

You can also garnish with a few slivered almonds and pistachios if you so like.
