Fresh Corn Salsa Recipe

I love corn or bhutta that we get in the monsoon in India. It is different from sweet corn in that it has a salty taste which I relish. It’s not that I don’t like sweet corn but having eaten the Indian variety I do prefer it a teeny bit more especially when I have roasted corn on the cob. For corn salsa and corn salad, sweet corn works really well and is available all around the year. This fresh corn salsa recipe is quick to make and a super delicious and healthy salad to include in your diet.

Here is my easy corn salsa recipe:

Ingredients:

2 grilled corn ears

¼ onion chopped finely

2 jalapenos or green chillies finely chopped

2 tbsp. cilantro or coriander leaves finely chopped

salt to taste

1 tsp. ground black pepper

2 lemons juiced

½ avocado finely chopped (optional)

some cherry tomatoes halved (optional)

Recipe:

Grilled corn does taste better. You could grill it on stove top or a grill. You could even steam the corn in the microwave if you so prefer.

Mix all the ingredients well. Add salt and pepper to taste along with lemon juice.

Serve immediately.

Pro Tips

Since there is a lot of lemon juice in this recipe, the avocado stays good.

In case you are not planning to immediately consume it, you can leave out the salt and pepper and add it just before serving.

You can leave out avocado or cherry tomatoes as per your choice.

You can choose to use less or more onion, as per your taste.
