Super Easy Black Eyed Pea Salad

This is a really easy black eyed pea salad that you can make in under 15 minutes if you have soaked and sprouted black eyed peas with you. It is super healthy and nutritious.

Ingredients

  • 2 cups sprouted black eyed pea boiled
  • ½ red onion finely chopped
  • 1 tomato finely chopped
  • 1 jalapeno finely chopped
  • 1 tbsp. cilantro finely chopped
  • ½ tsp. cayenne optional
  • 1 tsp. chaat masala
  • 1 lemon juice
  • salt to taste

Instructions

  • Boil sprouted black eyed peas in some water to which salt has been added. I boil for about 7-8 minutes till tender but not mushy.
  • Drain and keep aside.
  • Now mix all the ingredients well and serve immediately.
  • You could alternatively store it in the fridge within a few hours.

Notes

1. It tastes best when eaten fresh.
2. It is vegan and high protein.
3. This black eyed pea salad is very delicious with fresh flavours.
4. You could make black eyed pea salad with avocado too to add a creamy element.
5. You could also add chopped green pepper to the salad as well or other veggies of your choice like corn, boiled peas etc.
